Chicken Soup with Meatballs- AKA Flying Meatball Soup

When I was a kid my Mom and Grandmother use to make Flying Meatball Soup, or at least that is what they called it. I think it was just Italian Wedding Soup with Chicken, whatever it was it was delicious.
This weekend Matthew and I were watching "Alex's Day Off" on THE FOOD NETWORK and good old Alex was making something she called "Chicken and Egg Soup with Veal Meatballs". Matt got excited when he saw the bone marrow roasting in the cast iron frying pan and asked if I could make the soup for him this weekend. Hmm, now as some of you may know, raw chicken is my mortal enemy. I hate to touch it, it feels like a cold wet bumpy bag of skin! So obviously this was going to be a challenge, I swallowed hard and said I would try it.
It sounds scary and to be honest, there are a lot of elements involved in this soup, bone marrow, a whole chicken, eggs, spinach and even meatballs! I already was crossing a lot of bridges with touching the chicken and roasting bone marrow so I gave myself the easy out when it came to the meatballs and ditched the veal for the regular low fat hamburger meat.
Here is the recipe and I have to say, it was really good! I think the meatballs were the best part, as Matt said at least twice, "These are the best Meatballs I have ever tasted!" The Soup was a success! Good for that, we have about 5 leftover containers left, anyone want some Flying Meatball Soup?

Hubby ratting- 5 out of 5 forks!
Cat ratting- Flynn would not leave my side while I was cooking, he just sat and smelled the air. I am gonna go ahead and say he thought it was a 5 out of 5 forks as well.
